Homemade Chicken Taquitos
Time: 30 minutes
Yield: 6 servings
1 1/2 pounds chicken breast, shredded
1 tablespoon taco seasoning
12 corn tortillas
2 cups Mozzarella, shredded
2 cups iceberg lettuce, shredded
1 cup sour cream
1 cup guacamole (optional)
1 cup pico de gallo (optional)
Canola Oil, for frying
Firstly, wrap the tortillas into a towel and then warm them in the microwave for approximately 1 minute.
Then, in a large mixing bowl add together the taco seasoning and your shredded chicken breast, along with mozzarella.
Next, take one tortilla each time, and measure out about ⅓ cup of the filling and then put it inside the tortilla. Then tightly roll up the tortilla with the filling, stick a toothpick through the tortilla to hold it together when it gets fried.
Heat up your canola oil over a medium heat in a skillet or pan, until the oil is glistening. Then, gently fry the previously prepared tortillas until they are a light brown. Fry the taquitos in small batches and rotate them every 1 to 2 minutes. Then move them to a plate.
To Serve taquitos, top with some shredded lettuce, sour cream, guacamole, and pico de gallo or salsa, if you want.
