Dad’s Country Breakfast Skillet is the perfect way to get your morning started right! With yummy flavors combined with all the greatest comfort foods, you will love every bite.


• 3/4 pound bacon (about 12 slices)
• 4 eggs• 1 cup diced red potatoes
• 1/2 cup chopped green peppers
• 1/4 cup shredded cheddar cheese
• Fresh parsley
• Salt and pepper to taste


Step 1

Cut bacon into 1-inch pieces. Place the bacon pieces into a skillet over medium heat. Cook until the bacon is crisp, then drain half of the fat, bringing it back to the stovetop.

Step 2

Add potatoes and pepper to the pan. Cook until potatoes are golden brown–about 8-10 minutes.

Step 3

Place the potato and bacon mixture into a bowl. Place the skillet back on the stovetop.

Step 4

Add four eggs into the skillet. Don’t stir. Let them cook for 1 minute or until the egg whites set.

Step 5

Carefully place the potato and bacon mixture around the eggs, sprinkling some cheese on top, and cook for another minute.

Step 6

Allow the skillet to cool before serving!
